100% goodness this chicken noodle soups is gluten & casein free and is delicious! Chicken noodle is a staple in the house - especially in the nasty winter when it is cold and it is cold & flu season. Easy to make and you won't believe it is gluten free.

Simple Gluten Free French Onion Soup



I love french onion soup. I have not had it in over 4 years and this week we are all sick here with the flu so I thought I would adapt my favourite french onion soup recipe into gluten free so we could all enjoy.  It was incredible. I ate too much and I will for sure be making it again.

Gluten Free Zucchini Pizza Bites


I love eating naturally gluten free. It is easier and cheaper and not that hard to do.  Sometimes I also want a quick snack and pizza is usually up there.

This zucchini pizza bite recipe is awesome.  Tasty, quick and healthy and gluten free. It is perfect for a snack, side dish for dinner or finger foods for a party.  If you love zucchini and pizza you will love this and the kids will too!

Gluten & Casein Free: Salsa Fresca Fajita Salad w/ Rice Works





If you have never tried Riceworks gourmet brown rice crisps you need to go run and get yourself a bad, or three. They really are that good.  They come in 6 different varieties and I have tried 4 of them and all of them blew me away. 

My favourite of them is definitely the Baked Cinnamon. They are NOT dairy (casein) free so I don't eat them too often. All flavors are gluten free and baked with whole grain brown rice. They can be enjoyed on their own, used for dipping or added to a recipe.
 

The Sea Salt Riceworks crisps are perfect for dipping. As a person with celiac disease I cant eat pita bread and this product is the perfect substitute for dipping into Hummus. As you know I have just recently been making and eating hummus (see recipe here) and the sea salt crisps were perfect!

Riceworks sent me some recipes of theirs to try out and I was very intrigued by their Salsa Fresca Fajita Salad.

Gluten Free Breaded Chicken & Jalapeno Havarti Sandwich


I love sandwiches and since eating gluten free I don't eat sandwiches too often.  Sandwiches are great because well, you can make only about 100 different types and this weekend I was in the mood for something epic and filling.

In came the idea for a breaded chicken & jalapeno havarti sandwich.  Using two of my favourite products - Kinnikinnick's Panko Style Bread Crumbs and Sandwich Bread from Portions I embarked on making and hopefully enjoying a very tasty and filling sandwich. Tasty it was!!

Homemade Gluten Free/Dairy Free Hummus

I have been on the hunt for a good vegetable dip that my family could eat. Since we have both a casein intolerance and a lactose intolerance in the house {as well as gluten} it was harder to find one that would fit all three restrictions.  There are some incredible dips out there with dairy, so having a lactose issue you could get away with eating a yogurt based dip most of the time, not the case with the casein allergy.

I have heard about hummus but had never really tried it before. I decided to make some and see what we thought of it.  It is gluten free and casein free and as a bonus it is also really healthy.  We eat it with cut up vegetables and it is SO GOOD!

Quiche was one of my favourite things to eat when I was younger. I didn't get it too often but LOVED eating asparagus or broccoli quiches. My mom made the best ones! 

It had been about forever and then some since I have had one but really wanted the 'taste' of quiche so I decided to make a crustless one. Yes, I could make a gluten free crust, but as a super busy mom of 3 I wanted something quick, healthy and easy.

Gluten Free Baked Macaroni and Cheese

Macaroni and Cheese is one of my favourite things to eat. I honestly miss Kraft Dinner - although I know it is so not good for you - I miss it. This recipe is SO much better then Kraft Dinner though!  I make this one with Almond Milk as a base for the cheese sauce. Might seem sort of pointless given it is cheese sauce, but my husband and Baby E can't tolerate milk, but do ok with cheddar cheese.

Root Beer Pork Chops

This recipe is another favourite for my family. All three of my kids love it and it's a frequent dinner made when my younger brother comes over too.  What I love so much about this recipe is it is naturally gluten free - the benefit of that being that I don't have to search out for a gf option of some obscure ingredient and that makes it more economical.

I love trying out new recipes and different types of food. Since we are gluten free I find it easier to try and cook naturally gluten free foods. They are typically a lot cheaper and much healthier then store bought or processed gluten free products.

One recipe that we tried out recently is the Chicken kebabs with brown rice and homemade tzatziti. I love this meal because there are so many different variations - different herb mixtures, different meats, veggies or fruits. It is easy to tailor to your families likes.

Product Review: Kinnikinnick Panko Style Bread Crumbs + Recipe

Kinnikinnick Panko Style Bread Crumbs (Gluten Free)
Kinnikinnick sent me a sample of their new Panko Style Bread Crumbs to try out. I have been trying to think of the perfect recipe to make with the panko crumbs that would give me a good idea on how great this product is and decided on making Eggplant Parmesan. I have not had this recipe in over 10 years and certainly not since going gluten free. I had not found a gluten free breadcrumb that I liked (and I hate making my own) so I really just avoided this recipe --- until now.

You know, the most simple meals for me to cook involve chicken breast. Perhaps because it is quick and easy to prepare - but the main thing is you can dress it up so many different ways.  Funny thing, I can not STAND the smell of raw chicken - so I cringe every time I cook it. Once it's all finished and out of the oven the smell is so good!

Salsa chicken is a favourite around here. Not only is it easy to make but the kids really enjoy it.

Crazy Easy but Super Tasty Olive Oil Veggie Pasta

So, as you all know I am a super busy mom of 3 young kids and sometimes I don't have the time (or patience) to put together a huge elaborate meal for the kids.  Since we have to eat gluten free, sometimes that can be a challenge.  

One of those meals that is in my rotation for that type of day is the Olive Oil Veggie Pasta. From start to finish it takes only about 15 minutes - for real. There are a hundred different variations that can be made to this one too so it's hard to get tired of it.
