Gluten Free Chocolate-Covered Strawberry Marshmallow Cookies (just like Viva Puff Cookies)



Growing up Viva Puffs were one of my favourite cookies and it has been well over 5 years since I have had one and since they are not gluten free I decided to come up with my own recipe - totally gluten free.  These cookies are simple to make and taste just like a viva puff. Even if you are not eating gluten free these cookies will not disappoint!

Gluten Free Ice Cream Pie


It gets HOT here in the summer. You wouldn't think that of Canada but yeah, Ontario loves it's humidity.  Using the oven on days is near impossible unless you like boiling in over 40C (104F) heat  - but that makes you crazy in my books.

The heat does not need to stop you from eating amazing desserts though. This week I made up a gluten free ice cream pie. Bonus: no baking!

Gluten & Casein Free Dessert Pizza


Sometimes it can be hard to make a quick and easy gluten free dessert. Sometimes you really NEED dessert too.  I have some peanut butter cookies that I make often when we need a little treat but I was on the hunt for something else as well.

I wanted something quick, yummy and different. Filling, but not cake. I came up with Gluten Free Dessert Pizza.

Gluten Free & Casein Free Cupcakes

 

I am a huge fan of cupcakes. Seriously I could eat them every day and I actually went through a phase of baking these gluten and casein free cupcakes about a year ago. I can not get enough.  What I love so much about this recipe is it doesn't take any complicated flour mixture and basically everything you can find at your local grocery store.

One of my favourites is a Vanilla Cupcake with Maple Frosting!

Eating gluten free and casein free does not have to be a sentence to eating bad food and no deserts. Many of my past favourite recipes can be converted to this diet with a few modifications and will taste just as good. 

Lemon Meringue Pie is one of the best deserts to eat in the summer. Specifically I love graham cracker pie crusts and luckily Kinnikinnick has a gluten free and casein free version with their Graham Style Crumbs perfect to make the best gluten and casein free Lemon Meringue Pie

Homemade Gluten Free Blueberry Pie

Gluten Free Blueberry Pie

Blueberry pie goes a long way back for my family and I. Way back 11 years ago when my husband and I had our first date (June 25th) I brought him a homemade blueberry pie. Ryan's birthday was only a few days later so I thought bringing him a blueberry pie that I made would leave a lasting impression.


Well it did and still to this day I bake him a blueberry pie for his birthday.  Since way back when I was not diagnosed with Celiac Disease I was able to make him a regular gluten pie.  This was actually the first year that I made a gluten free version so we could all eat it.  


This crust is NOT casein free, but for those who are only of a gluten free diet this pie crust is incredible! Only needs a few simple items and is pretty easy to work with.

Product Review: Glutino Chocolate Vanilla Creme Cookies

Glutino Chocolate Vanilla Creme Cookies

When I was younger - even a few years ago - I was in love with a well known cookie called Oreo They were my favourite desert of all time, favourite snack and favourite treat. Then in 2007 I was diagnosed with Celiac Disease and with that out went my favourite Oreo. 

There are many options out now for gluten free oreo-type cookies and when my grocery store stocked up on Glutino Chocolate Vanilla Creme cookies I had to pick a pack up.

They are made up of a combination of corn flour, corn starch, rice flour, potato flour, tapioca and soy flours. They are gluten free but do contain eggs and soy ingredients with a warning of may containing dairy, peanuts and tree nuts.

Gluten Free Donuts



Saturday was my birthday and since I am the one who typically does the baking around here I was not exactly looking forward to making my own birthday cake.


Well, my brother surprised me by coming over with some homemade gluten free glazed donuts he made for my birthday. He got the great recipe from Adventures of A Gluten Free Mom's blog (Glazed Donuts) but made up is own combination for the All Purpose Flour Mixture (instead of the Better Batter GF Flour that Heidi used) to the following ingredients:
  • Brown Rice Flour 4 1/2 Cups
  • Corn Starch 1/2 Cup
  • Potato Starch 3/4cup + 2 Tablespoons
  • Tapioca Flour  3/4 cup + 2 Tablespoons
  • Xanthan gum 3 Tablespoons

Making up this mixture of flour and then putting into a resealable container or ziploc bag  will come into handy for your gluten free baking. 

The donuts were really good! They held up great and my brother said the dough was so easy to work with (and for those who have ever worked with GF dough it can be quite tricky at times).  The donuts were best the day of baking and were a little stale the next day but were the perfect treat! It had been SO long since I had eaten a donut and I think it was even the first time my kids had had a donut.

Product Review: Kinnikinnick S’moreables™ Graham Style Crackers

Kinnikinnick sent me a box of their new S'moreables™ Graham Style Crackers to review and I was so excited to try these out. It has been almost a million years since I have had a graham cracker or s'more so that is exactly what I intended to do with them.

The Kinnikinnick S'moreables  come in a 220g box and are made of a combination of pea starch, potato starch, brown rice flour, sweet rice flour and tapioca flour.  These are gluten free, casein free, nut free, egg free and yeast free.

The directions for making S'mores is printed right on the box so I went to work!

Gluten Free Peanut Butter Bars

If you have a love for Reese Peanut Butter Cups this is the recipe for you! Quick and easy with no cooking and ingredients that are always in the cupboard.

Ingredients:
  • 2 cups peanut butter
  • 3 1/2 cups icing sugar
  • 4 gluten free graham crackers (I used Kinnikinnick's S'moreables)
  • 2 tsp vanilla extract
  • 1/4 cup chocolate chips
  • 1/8 cup white chocolate chips
Directions:
  1. Mix peanut butter and icing sugar together until well blended; add vanilla extract.  Peanut butter mixture should be thickened and no longer sticky - use more icing sugar if needed
  2. Crush/crumble graham crackers and mix well into peanut butter mix
  3. Press mixture into a foil pan - can be either square pan or circle pie plate
  4. Melt chocolate chips in microwave until nice and runny and spread on top of peanut butter mixture
  5. Melt white chocolate chips in microwave until runny and using a spoon drizzle on top of chocolate
  6. Refrigerate for 1 hour or until hardened. 
  7. Cut and serve - refrigerate unused portions (ha)

Easiest Peanut Butter Cookie Recipe

This recipe is a huge favourite around here.  Not only are they amazingly super cookies, they are quick, I always have the ingredients and they are simple enough for my 4 and 3 year old to make with me.

Gluten Free "Canadian Gold" Cupcakes

Yesterday freestyle skier Alexandre Bilodeau won the men's moguls at the Vancouver Olympics - making it Canada's 1st Olympic Gold Metal on home soil.  It was a very proud moment for Canadians!

Today to celebrate the HUGE GOLD moment - I have made some Gluten Free Canadian Gold Cupcakes. 

I used the Gluten Free Vanilla Cupcakes recipe but baked them in lined muffin tins and baked for only 25 minutes.  The icing is the Buttercream Icing recipe and I used Wiltons Icing Color in Golden Yellow and topped with some red sugar sprinkles. 

Today we are also celebrating Family Day - a holiday only in it's second year celebrated in Alberta, Saskatchewan and Ontario - corresponding with the USA's Presidents Day.  So, we are celebrating as a family enjoying our Canadian Gold Cupcakes.

Gluten Free Vanilla Cake with Buttercream Icing

Today we celebrated my older daughter's 3rd birthday - and what better way to celebrate then with a homemade 2 layered gluten free cake. 

Gluten Free Vanilla Cake
Ingredients:
  • 1/3 cup oil
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup plain yogurt
  • 2 tsp. vanilla extract
  • 3/4 cup + 2 tbsp cornstarch
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp guar gum
Directions:
  1. Preheat oven to 350
  2. Combine oil, sugar and eggs and mix until well blended; add vanilla extract and yogurt
  3. Add the rest of the ingredients and stir until smooth and blended
  4. Pour into oiled baking dish
  5. Cook for 30-40 minutes or until a dipped in toothpick comes out clean
Buttercream Icing
Ingredients:
  • 1/2 cup shortening
  • 1/2 cup butter
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • 4 cups icing (confectioners) sugar
Directions:
Blend well the shortening, butter, vanilla extract and milk.  Add icing sugar 1 cup at a time until thick.




This is by far my favourite gluten free cake recipe.  It is impressively moist (thank you yogurt) and has no complicated flour mixture or expensive pre-packaged mix.  It has the perfect crumbly texture and really tastes like a gluten cake.  

I am by no means a professional cake decorator, so these pictures don't  really do the cake it's justice.  Try this recipe out yourself and let me know what you thought of it!

GF/CF Sugar Cookies

I decided to be adventurous today and bake up some gluten free casein free cookies with my 3 kids today. I have never made regular sugar cookies before - and certainly not GFCF ones so I was not sure what I was up for (I have made a million regular gluten cookies before in my lifetime).

The recipe is as follows:

1/2c casein free margarine
1/2c sugar
1 egg
1 1/2tbs almond milk
1c corn starch
1/2tsp baking soda
1tbs + 1ts
p baking powder
1/4tsp salt
2tsp vanilla extract
1 1/2tsp guar gum

Preheat oven to 375
Cream the butter and sugar in a medium-size bowl. Add the egg.
Mix until light and thick. Add the other ingredients. Beat until thick and creamy.
Drop by rounded teaspoons onto the prepared pan. Press to a 1/4 inch
thickness with moistened fingertips. Top with sugar or sprink
les, if desired.
Bake for 8 to 10 minutes, until lightly browned. Do not underbake!
These cookies will seem flexible when transferrin
g them from the pan to a rack. They will crisp
while cooling.



The recipe i used for the icing is:

3/4c casein free margarine
3c icing sugar
2tbs vanilla extract
1/2c almond milk

Mix all ingredients together. Add food coloring if desired.

I always use Wilton Icing Colors - they have AMAZING colors and will last forever. To get a nice dark color you just need to dip the tip of a knife into the jar and that is it! I used the colors Moss Green and Red-Red
