Gluten Free Vanilla Cake with Buttercream Icing

Today we celebrated my older daughter's 3rd birthday - and what better way to celebrate then with a homemade 2 layered gluten free cake. 

Gluten Free Vanilla Cake
Ingredients:
  • 1/3 cup oil
  • 3/4 cup sugar
  • 2 eggs
  • 1/2 cup plain yogurt
  • 2 tsp. vanilla extract
  • 3/4 cup + 2 tbsp cornstarch
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp guar gum
Directions:
  1. Preheat oven to 350
  2. Combine oil, sugar and eggs and mix until well blended; add vanilla extract and yogurt
  3. Add the rest of the ingredients and stir until smooth and blended
  4. Pour into oiled baking dish
  5. Cook for 30-40 minutes or until a dipped in toothpick comes out clean
Buttercream Icing
Ingredients:
  • 1/2 cup shortening
  • 1/2 cup butter
  • 1 tsp vanilla extract
  • 2 tbsp milk
  • 4 cups icing (confectioners) sugar
Directions:
Blend well the shortening, butter, vanilla extract and milk.  Add icing sugar 1 cup at a time until thick.




This is by far my favourite gluten free cake recipe.  It is impressively moist (thank you yogurt) and has no complicated flour mixture or expensive pre-packaged mix.  It has the perfect crumbly texture and really tastes like a gluten cake.
