Gluten Free Ice Cream Pie

It gets HOT here in the summer. You wouldn't think that of Canada but yeah, Ontario loves it's humidity.  Using the oven on days is near impossible unless you like boiling in over 40C (104F) heat  - but that makes you crazy in my books.

The heat does not need to stop you from eating amazing desserts though. This week I made up a gluten free ice cream pie. Bonus: no baking!

Sometimes it can be hard to make a quick and easy gluten free dessert. Sometimes you really NEED dessert too.  I have some peanut butter cookies that I make often when we need a little treat but I was on the hunt for something else as well.

Accustomed Chaos is Heading To NYC & BlogHer

In just under 2 weeks I will be arriving to NYC for the first time.  I have heard it is one of the places to go, my husband has been,  my parents and sister and now, it is my turn.  I am not just going for the pure fun and joy of it - actually I would not be going at all if a few things didn't come into play for me.

BlogHer - one of the largest conferences for women in blogging & social media is in New York City this year.  Tickets were sold out forever ago and I had just left it at that - I would plan and save to go next year and sit back in jealousy as I read all the tweets & blog post about the amazing time all my friends were having there.  I had entered a few contest to try to win a ticket to BlogHer but as the contests ended and I did not win I was okay with that and moved on.

Then the most amazing thing happened. It was my anniversary morning (July 10th) and I was checking my email when someone left a comment on my site saying congrats for winning a ticket to BlogHer. I thought for sure she had me mixed up with someone else but decided to check on it.  Opened up twitter & had all these messages to me congratulating on winning.  Turns out the contest I entered at Mamavation had been re-opened and I was selected as the winner of 1 full ticket to BlogHer and had 2 hours to reply back!

Then I got started right away on all the plans I had to make! Thankfully everything has been coming together so quickly & easily for me and that puts me at so much ease.  Passport was the first thing that I had to take care of - then came the business cards and hotel, travel and money.

It will be my first time away from her since she was born and the first time we will have to sleep with out each other at night {since we are still co sleeping}.  I have an amazing family and I know she will be just fine without me for a few days - I just have to get over my anxieties about it.

Gluten & Casein Free Pancakes (Mix)

One of my favourite things to do on a weekend (usually a Sunday) is make a large breakfast for the family. Most mornings we eat fruit and cereal so I like to mix it up sometimes and do something larger, more exciting.

Pancakes are one of the family's favourites and I am happy we don't have to miss out on such a great breakfast even though we eat gluten and casein free.  I have tried quite a few different gluten & casein free pancake mixes and also ones from scratch and the family's favourite is Kinnikinnick Pancake & Waffle Mix. 

 

Gluten Free & Casein Free Bread (From Mix)

With Big P starting school in September I am looking for the tastiest, cheapest and easiest gluten free bread (either from mix, bought or homemade) that will be a staple in his daily lunches. I have been on the hunt and have found the best gluten free bread, hands down anywhere. My brother (who also has Celiac Disease) also says this is the best bread he has ever had.  What is it? Eating gluten free and casein free does not have to be a sentence to eating bad food and no deserts. Many of my past favourite recipes can be converted to this diet with a few modifications and will taste just as good. 

Lemon Meringue Pie is one of the best deserts to eat in the summer. Specifically I love graham cracker pie crusts and luckily Kinnikinnick has a gluten free and casein free version with their Graham Style Crumbs perfect to make the best gluten and casein free Lemon Meringue Pie

Gluten Free Breaded Chicken & Jalapeno Havarti Sandwich

I love sandwiches and since eating gluten free I don't eat sandwiches too often.  Sandwiches are great because well, you can make only about 100 different types and this weekend I was in the mood for something epic and filling.

In came the idea for a breaded chicken & jalapeno havarti sandwich.  Using two of my favourite products - Kinnikinnick's Panko Style Bread Crumbs and Sandwich Bread from Portions I embarked on making and hopefully enjoying a very tasty and filling sandwich. Tasty it was!!

Product Review: Kinnikinnick Panko Style Bread Crumbs + Recipe

Kinnikinnick Panko Style Bread Crumbs (Gluten Free)

Kinnikinnick sent me a sample of their new Panko Style Bread Crumbs to try out. I have been trying to think of the perfect recipe to make with the panko crumbs that would give me a good idea on how great this product is and decided on making Eggplant Parmesan. I have not had this recipe in over 10 years and certainly not since going gluten free. I had not found a gluten free breadcrumb that I liked (and I hate making my own) so I really just avoided this recipe --- until now.

Product Review: Kinnikinnick Personal Size Pizza Crust

I had never tried the Kinnikinnick Personal Size Pizza Crust before, in fact I hadn't even seen it in my store yet (it's there now though) so when Kinnikinnick sent me a box of it to try out I was quite excited. I had not had too much success finding a frozen or store bought pizza crust that will stand up to my picky texture standards so I was not really sure what to expect. 

Kinnikinnick Personal Size Pizza Crust is made of a combination of sweet rice flour and tapioca starch and is gluten free, dairy free (and casein free), soy free and manufactured in a facility free from peanuts/tree nuts, gluten and dairy.  

Product Review: Kinnikinnick S’moreables™ Graham Style Crackers

Kinnikinnick sent me a box of their new S'moreables™ Graham Style Crackers to review and I was so excited to try these out. It has been almost a million years since I have had a graham cracker or s'more so that is exactly what I intended to do with them.

The Kinnikinnick S'moreables  come in a 220g box and are made of a combination of pea starch, potato starch, brown rice flour, sweet rice flour and tapioca flour.  These are gluten free, casein free, nut free, egg free and yeast free.

The directions for making S'mores is printed right on the box so I went to work!

Product Review: Kinnikinnick Montana Chocolate Chip Cookies

Well, Kinnikinnick scores again with these wonderful chocolate chip cookies.  This product is gluten free, wheat free, dairy free, yeast free, corn free and nut free but is FULL of flavor! 

When I was eating casein free as well as gluten free these cookies saved my sanity.  It can be hard enough to find a delicious gluten free cookie - but here is one that is free from many allergens but still tastes like a gluten filled/casein filled cookie.  I try not to buy these too often because I can literally go through them in an alarming speed - it could be a sport for me.  These cookies are like bite sized pieces of gold that have an amazing texture and great crunch.  I have heard some people say they have a small hint of aftertaste to them, but honestly I have never tasted it.  This cookies is as good as i rememebr a Mr. Christie cookie being.

I am looking forward to trying out what else Kinnikinnick can come up with.

Product Review: KinniToos Sandwich Cookies

Since becoming gluten free after a Celiac Diagnosis back in 2007 I have been mourning the loss of Oreo Cookies. My favourite treat since early childhood, I had not been able to find a GF substitute for this cookie that did not taste stale or like cardboard... that is until now:

KinniToos Chocolate Vanilla Sandwich Cookies have really hit the nail on the head with this cookie that is gluten free, casein free, nut free, egg free and yeast free.  Normally if I see a product that is free from all that - it means cardboard.  So NOT the case with this cookie!

I am a big texture eater... if i am trying to find a GF/CF substitute for something I need for it to have the same texture if I am going to consider it a hit.  The KinniToos cookie has an amazing crumbly texture - an exact substitute for the gluten-ridden Oreo cookie.  I was so impressed with this cookie I literally jumped for joy upon the first bite and shared a cookie with my gluten eating husband who was equally impressed.  I bought a pack of them for my brother (also has Celiac Disease) and gave them to him for Christmas, I knew finding a cookie that tastes, crumbles and feels just like an Oreo cookie - would be the perfect gift.

The price is on par with other store-bought GF/CF treats at around $4.99 for a 225g pack - so certainly not an every week buy - but so worth it for the occasional treat.  Kinnikinnick also makes the sandwich cookie in vanilla and fudge. 

For any person on a GF and/or CF diet - I totally recommend purchasing this amazing cookie and enjoying with a big glass of milk (cows, goats, almond, soy - whatever your preference :D )
