Gluten Free Tomato Basil Crustless Quiche

Tomato Basil Quiche with Spinach Salad {gluten and casein free}



Quiche was one of my favourite things to eat when I was younger. I didn't get it too often but LOVED eating asparagus or broccoli quiches. My mom made the best ones! 

It had been about forever and then some since I have had one but really wanted the 'taste' of quiche so I decided to make a crustless one. Yes, I could make a gluten free crust, but as a super busy mom of 3 I wanted something quick, healthy and easy.

Keep Reading for Ingredients and Directions:


Ingredients:
  • 12 eggs
  • 1/2 cup almond milk {or milk if you are not dairy free}
  • 2 tomatoes; chopped
  • 2 Tbs dried basil
  • salt and pepper to taste

Directions:
  1. Preheat oven to 350
  2. Combine all ingredients and pour into baking dish {as simple as that!}
  3. Bake in preheated oven for 30 minutes

There are so many variations to make of this. If you are not eating dairy free adding any type of cheese to this {mmm Parmesan} would be incredible, or bacon if you are not vegetarian.  I like to mix all different veggies and herbs and try something new all the time.
