Chicken Kebabs with Brown Rice and Homemade Tzatziki
I love trying out new recipes and different types of food. Since we are gluten free I find it easier to try and cook naturally gluten free foods. They are typically a lot cheaper and much healthier then store bought or processed gluten free products.

One recipe that we tried out recently is the Chicken kebabs with brown rice and homemade tzatziti. I love this meal because there are so many different variations - different herb mixtures, different meats, veggies or fruits. It is easy to tailor to your families likes.

Ingredients:

For Marinade:
  • 3 cloves of garlic 
  • 1 tsp dried oregano 
  • 1 tsp sugar
  • zest and juice of 1 lemon  
  • sea salt and freshly ground black pepper 
  • olive oil 
    For Kebabs:
    • green pepper; seeded and cut into squares
    • red pepper; seeded and cut into squares
    • onion; cut into sections
    • cherry tomatoes
    • mushrooms
    • chicken; cut into cubes
    • pineapple; cubed

    Directions:
    1. Combine all marinate ingredients and whisk together
    2. In a separate bowl add cut chicken cubes and cover with enough marinate; reserving enough for veggies
    3. Cover and refrigerate for at least 6 hours (best overnight)
    4. Soak long wooden skewers in water for about 20 minutes. Remove the chicken from the refrigerator and allow it to return to room temperature. Alternately thread the chicken cubes, peppers, onions, tomatoes, pineapple and mushroom on the skewers.  Brush the remaining marinate onto the veggies.

    If cooking on BBQ:
    1. Prepare BBQ
    2. Brush the grill rack with olive oil and place kebabs on - turning frequently for approx. 5 minutes each

    If cooking in oven:
    1. Preheat oven to 350
    2. wrap each kebab in foil; leaving enough room for them to breathe
    3. bake for 30 minutes

    Serve immediately with a side of brown rice and homemade tzatziki.  What are your favourite meats and/or veggies for kebabs?
