Saturday was my birthday and since I am the one who typically does the baking around here I was not exactly looking forward to making my own birthday cake.
Well, my brother surprised me by coming over with some homemade gluten free glazed donuts he made for my birthday. He got the great recipe from Adventures of A Gluten Free Mom's blog (Glazed Donuts) but made up is own combination for the All Purpose Flour Mixture (instead of the Better Batter GF Flour that Heidi used) to the following ingredients:
- Brown Rice Flour 4 1/2 Cups
- Corn Starch 1/2 Cup
- Potato Starch 3/4cup + 2 Tablespoons
- Tapioca Flour 3/4 cup + 2 Tablespoons
- Xanthan gum 3 Tablespoons
Making up this mixture of flour and then putting into a resealable container or ziploc bag will come into handy for your gluten free baking.
The donuts were really good! They held up great and my brother said the dough was so easy to work with (and for those who have ever worked with GF dough it can be quite tricky at times). The donuts were best the day of baking and were a little stale the next day but were the perfect treat! It had been SO long since I had eaten a donut and I think it was even the first time my kids had had a donut.
