Super Simple Salsa Chicken on Brown Rice

Salsa Chicken: Gluten Free in 35 minutes

You know, the most simple meals for me to cook involve chicken breast. Perhaps because it is quick and easy to prepare - but the main thing is you can dress it up so many different ways.  Funny thing, I can not STAND the smell of raw chicken - so I cringe every time I cook it. Once it's all finished and out of the oven the smell is so good!

Salsa chicken is a favourite around here. Not only is it easy to make but the kids really enjoy it.

Ingredients:
  • 2 boneless skinless chicken breasts
  • 1 cup salsa
  • 1/4 cup french dressing
  • 1/4tsp chili powder
  • 1/4tsp cumin
  • 1/2 cup grated mozzarella cheese
  • salt and pepper to taste
  • sour cream (optional)

Directions:
  1. Preheat oven to 425
  2. Cook rice to directions on package
  3. In a baking dish place chicken breasts and sprinkle with chili powder, cumin, salt and pepper
  4. Pour salsa and french dressing over chicken and cover with mozzarella cheese
  5. Bake in oven for 35 minutes
  6. Cut chicken into slices and place on brown rice and top with sour cream

Give this recipe a try and you will be surprised with how tasty and quick it is! It can be made casein free by substituting the cheese for soy cheese.
