Gluten Free Meatloaf

One of my 4 year old's favourite meals is gluten free meatloaf, mashed potatoes and steamed broccoli (seriously a proud mama because all my children love broccoli). I make this every few weeks and really like to toy around with the different spices and 'sweeteners'.  Here is the most recent one that we all enjoyed:


 Ingredients:
  • 1 lb lean ground beef
  • 1 lb lean ground pork
  • 1/2 cup milk (almond milk works great for casein free diets)
  • 1/2 cup salsa
  • 2 eggs
  • 1/2 tsp salt
  • 2 tbs cola or root beer soda
  • 1 chopped sweet onion
  • 1/2 tsp garlic powder
  • 3/4 cup finely crushed rice crackers or gluten free bread crumbs
  • fresh ground pepper to taste

Directions:
  1. Preheat oven to 350 degrees and lightly grease 2 loaf pans
  2. In a mixing bowl combine all ingredients until well blended
  3. Form into a loaf in the pans and top with ketchup
  4. Bake for 1 hour in preheated oven or until thermometer reads 160
