"Lazy Saturday" Nachos

After a busy day cleaning the house and hosting a birthday party for my daughter who just turned 3 (we had 18 people over!) my husband and I decided it would be the perfect ending to a long day to treat ourselves to one of my favourite 'dinners': nachos! We eventually got the two older (and amped up) children to bed and I sent my husband to the store for our supplies

Ingredients:
  • Bag of Tortilla Chips
  • 1 green pepper; chopped
  • 1 red pepper; chopped
  • 1 sweet onion; chopped
  • cherry tomatoes; chopped
  • bacon bits
  • 1/2cup grated cheddar cheese
  • 1/2cup grated mozzarella cheese
   *optional: cooked ground beef with taco seasoning

Directions:
  1. Preheat oven to 450
  2. On a baking sheet layer a sheet of tortilla chips (if using the beef layer on top of chips) add chopped vegetables. 
  3. Top with both cheeses and sprinkle bacon bits on top.
  4. Cook in preheated oven for approx 5-7minutes or until cheese is melted.
  5. Serve with sour cream and salsa

My husband and I enjoyed this tasty 'treat dinner' while we sat on the couch with our little one who was still awake (1yr old) and cheered on our Canadian Athletes at the 2010 Olympics
