If you are looking for a great tasting fish dinner - this one is for you. Not something I would recommend on your weekly rotation (because it is fried after all), but definitely should be on your monthly rotation!
Breaded Haddock:
- Vegetable oil, for frying
- 2 haddock fillets
- Salt
- Freshly ground black pepper
- 1 cup rice flour
- 2 eggs, beaten with 2 tablespoons milk (egg wash)
Cut the fillets, horizontally into strips, 1/2-inch thick. Season the fish with salt and pepper.
Combine the rice flour and season with salt and pepper. Dredge each piece of fish in the flour, coating completely. Dip each piece in the egg wash, letting the excess drip off. Dredge the fish for a second time in the flour, coating completely. Fry the fish in batches until crispy, about 3 to 4 minutes. Remove and drain on paper towels.

- 4 russet potatoes - leave 2 unpeeled - cut into quarters
- 1/2 cup milk
- 1/4 cup butter
- 3/4 teaspoon salt
- Fresh ground pepper (to taste)

Green Bean Medly:
In a skillet fry 2 strips of bacon and onion until cooked. Add fresh pepper, and green beans. Cook until desired tenderness (6-7minutes). Crumble bacon and sprinkle on top.

Homemade Tartar Sauce:
- green beans; washed and ends trimmed
- 2 strips of bacon
- 1/4 onion; chopped
- 1/4 red pepper; chopped
- fresh ground pepper
- garlic; minced

Homemade Tartar Sauce:
- 1/2 cup Mayonnaise
- 1/4 cup sweet pickle relish
- 1 tablespoon sugar
- 1/2 teaspoon dry parsley flakes
- 1/4 teaspoon onion powder
