Delicious Gluten Free Banana Bread !

Gluten free home cooking really isn't that difficult once you stock your pantry with some odd flours and some must have ingredients essential for making the food bake up and taste like actual food (xanthan gum??).

My brother was over yesterday and we had decided to bake up some GF banana bread (one of our favourites, as well as my children).  

Here is the recipe for this amazing gluten free bread:
  • 2 cups soy flour
  • 1 cup potato starch
  • 1/2 cup rice flour
  • 1tsp xanthan gum
  • 2tsp baking soda
  • 2 1/2tsp cream of tartar
  • 1tsp salt
  • 2/3 cups butter (room temperature)
  • 1 1/3 cup sugar
  • 4 eggs (Well beaten)
  • 2 cups smooshed bananas (very ripe)
  • 1 cups chopped walnuts/chocolate chips (optional)


Preheat oven to 350 degrees.  Lightly butter 3 foil loaf pans.

Add the sugar and room temperature butter together in a bowl.  Mix with hand mixer until smooth then add the eggs and beat again.  In a separate bowl mix all dry ingredients together and set aside.  Break the very ripe bananas up into the bowl with sugar/butter/egg mixture and blend with the hand mixer.  Add the dry ingredients and mix until blended completely.

Distribute mixture into 3 foil loaf pans and place in the preheated oven for 45-55 minutes.

This recipe can also be made casein free by substituting the butter for either CF margarine or shortening.

Now, not only will this recipe give you the BEST tasting banana bread you have ever had - but it will leave your house smelling so amazing you will do all you can to NOT eat all three loaves in one sitting.
